Rather than circulating fluid in the ground, I want to use the waste heat from a heat-pump based air conditioning to heat a swimming pool. From experience, what are the possibilities and tradeoffs?

Well I have made plenty of heated dumps in my pool. But I got tired of the floating snicker bar look the next day so I stopped drinking.
Its actually quite a good idea. As long as you can maintain the temperature differences that work for you and can switch to something else when the differences no longer work to your advantage.
I like the idea.. but how could you regulate the temp of the pool so its always cooler than what your dumping
Absolutely, If it’s big enough the ouside atmosphere will keep it cool.
